Hi everyone! I’m so excited to be here for the 3rd
Annual Mistletoe Madness!
The holidays are a time for eating here in the
south, so I thought I would share some of my favorite holiday recipes. Enjoy!
Sweet Potato Casserole
3 eggs
½ cup milk
½ tsp. cinnamon
¾ tsp. salt
¼ cup softened butter
¾ cups dates
5 small cans sweet potatoes/yams
pecan halves
Blend eggs, milk, cinnamon, salt, and butter for
30 seconds or until liquid. Add dates and sweet potatoes one at a time until
the middle of the blender. Once blended, put into a buttered baking dish, cover
top with nuts (you can crush the nuts), and bake for 30 minutes at 350 degrees.
Sausage Stuffing
16oz bag stuffing
6 tbsp. butter
1lb sausage
1 medium sweet onion, chopped
2 apples (peeled, cored, chopped)
1 to 2 ribs of celery chopped
½ tsp. Kosher salt
3 cups chicken broth
¼ cup parsley
½ cup walnuts (toasted)
2 eggs beaten
Heat oven to 325 degrees. Put stuffing in a bowl
and set aside. Butter 3 qt. casserole dish, melt 2 tbsp. of butter in skillet,
add sausage. Add sausage to cubes (stuffing). Melt the rest of the butter and
add onion, apple, celery, and salt. Add broth and parsley and bring to a bowl.
Mix into stuffing mix and toss (add in walnuts). Add in eggs. Cook for 40
minutes. Drizzle 2 tbsp. of pan drippings or butter on top and cook for 20
minutes more.
